Had a small Christmas gathering at Venes's house with Lay Ling, Phaik Suan, Ms Yeap, Jacey Wong, Christina and Yvonne.....some couldn;t join us!
All of us enjoy it right?
Enjoy the preparation, buy present, cook......
we have...Fried Rice, Fried tom yam beehoon,. spring roll., chicken wing, cocktail sosage, nuggets,sushi, kiam kuih, curry chicken and roti jala
Chocolate fondue, orange jelly, cherry tomato with sour plum...
All of us have fun right?

~2012 Merry Christmas~






Christmas come once a year!! Let's celebrate.....

I bake some 'Gingerbread man' cookies to my friend house..
we have a small gathering X'mas party tomorrow..
Ya,,,,is cookies with gingerbread man shape,
 kids don't like ginger




Butter Cookie
Ingredients:-
~~Butter                  200g
~~Icing sugar           50g
~~All purpose flour 150g
~~Corn flour           30g
~~Custard Powder 20g
Method:-
1. Beat butter and icing sugar till creamy.
2. Sift in flour ,corn flour and custard powder, mix well to a soft dough.
3. Roll it flat on table top using cookies cutter cut out the cookies shape, place on baking tray.
4. Bake at preheated oven at 180C for 13-15 minutes or golden brown.
5. Cool down the cookies decorate with icing .(i mix icing sugar with some water , put in piping bag)
6. After the icing hard keep it in a air tight container.

'Tang Yuan' is simple , most of you know to do right?
Just Glutinous Flour , water and color!
I'm sure now we seldom use coloring ,
I use red dragon fruit for red,
Carrot for orange and Pandan leaf for green.

~Orange Chiffon Cake~

Yes...is Chiffon cake again!!  Beside Hokkaido chiffon cupcakes, this chiffon cake i bake none stop for the pass one week....bake for myself, mom, nephews , best friend...and mom request again, "orange flavour chiffon cake"..so i search found the recipe from (http://wendyinkk.blogspot.com/). This orange chiffon the best chiffon i bake...all of us like it very much! From the taste , the cake texture, the softness of the cake all GOOD!......so try it out!!

Ingredients (A)
** 115ml  Fresh Orange Juice (i use 2 oranges)
** 4  Egg Yolks  
** 75ml   Corn oil
** 100gm Sugar (i use 80gm sugar)
** 150gm  Flour (i use Self Rising Flour omitted Baking Powder)
** 1 tsp Baking Powder
** 1 Tbsp Orange Zest ( i use 2 oranges)

Ingredients (B)
** 4 Egg Whites
** 90gm Sugar
** 1/8 tsp cream of tartar

Method:-
1. Combine egg yolks, oil, orange juice and sugar, mix well.
2. Sift flour , baking powder into (1) , mix well
3. Stir in orange zest, set aside.
4. Place egg whites into a clean bowl, beat at low speed till it froths add in   cream of tartar and continue beat at high speed till soft peak.
5. Put in sugar in 3 intervals and beat till stiff peaks.
6. Pour i 1/4 of the beaten egg whites into (3), fold the egg whites into the batter, follow by another 1/4 of egg white, and another 1/4 egg white fold it.
7. Pour the (6) batter to the remaining 1/4 egg white and fold well. PLEASE DON'T STIR, IS FOLD.
8. Pour the batter into a 22cm chiffon cake pan. Lightly shake it left and right to level the cake.
9. Bake in preheated oven 170C for 40mins (i bake at 165C for 45mins)
10. Invert pan immediately after remove from oven.Leave the cake to cool down this way.
(i leave the cake upside down for about 3 hours then remove from pan and cut with a sharp knife )

~Pandan Chiffon Cake~

Pandan chiffon cake,,,a very common cake and i'm sure a lot of you like this cake , this is the 1st time i made Pandan chiffon cake , i don't have this chiffon cake tin, i wanted to buy BUT my mom say 'i bought long time ago, let me go 'korek'((dig/ find) out for you, no need buy"....so i wait lar....finally last week she manage to 'korek' for me!! Sooooo.... i try it out..YEAH!!


Basic Pandan Chiffon Cake
(a)
5 Egg Yolk
30gm Corn Oil
30gm milk
60gm Pandan Juice
100gm Self Rising Flour (sifted)

(b)
5 egg white
70gm sugar

Simple Method
1. Combine all the ingredients (a) mix well , i use whisk slowly mix
2. Beat (b) till peak
3. Fold in 1/3 of beaten egg white mix well follow by another 1/3 of egg white and the balance till all well combine.
4. Bake at pre-heated oven 160C for 45mins
5. Take out the cake from oven ,immediately put the cake "Up side down" on a wire rack till the cake completely cool down then remove the cake from the cake tin.

~Braised Chicken feet with Mushroom~


I loved Chicken feet since i was a child....so when i 'think of it',i will go  market buy 'some' chicken feet and braised it with mushroom. Now all the chicken feet sell in market already chopped off claw and quite clean. my version is very simple all put in pot to braised.

so what we need?

** 10 pairs of chicken feet
** 8 pcs dried mushroom, soaked (cut in half)
** 5 dried chillies
** 5 slices ginger
** 1 star anise

Seasoning
** 2 Tbsp oyster sauce
**1 tsp sesame oil
** 1 Tbsp thick soy sauce
** 2 Tbsp light soy sauce
** rock sugar

I use a pot heat sesame oil fry ginger and dried chilies then add in star anise follow by add in chicken feet and mushroom at the same time add in all the seasoning stir well then add in 2 bowls of water , bring to boil then reduce heat braised till the chicken feet are tender.Ehmmm...yummy!!

~Yam Cake (Or Kuih)~


Yam Cake / Or Kuih  my favorite too!!! I like yam...
bought a small yam just nice for me to steam one small plate of Yam cake!

Ingredients 
(a)~200gm yam, cut small cube

(b)~100gm Rice Flour
    ~20gm Tapioca Flour
    ~180ml Water
    ~a pinch of salt
(Mixed and sieved the above ingredients)

(c) for toppings
~50gm dried shrimp. soaked and chopped
~5 shallots, slice in thin slices
~2 stalks spring onion, chopped 
~2 red chillies, chopped

**Seasoning (Salt 1/4tsp, pepper 1/2tsp and five-spice powder 1/2 tsp)

Method
~Heat up 5Tbsp some oil and saute shallots till crispy , remove from wok  set aside
~Use the remain oil add in dried shrimp saute till fragrant, remove from wok set aside
~Use the remain oil add in yam and stir fry, add some water , cooked till yam soft. Then add in (b) and seasoning..keep on stir till the batter cook and thick.
~Pour the thick batter into a round tray ( tray put some oil)
~Steam it for 45mins. Leave aside to cool.
~ Put the toppings...cooked dried shrimp, crispy shallot, spring onion and chillies.

~Shrimp Dumplings (Har Kow)~

'

Last few weeks went to my friend house we do 'Chai Kuih ' together.....
at the end she took out some marinated shrimp say " Let's us try do some har kow"   WOW....very good ...so the next day i also do some since all the ingredients i have!!

The 'Har Kow' skin i use 'chai kuih' skin recipe
so, just marinate the prawn is simple

medium prawn 300gm, water cheasnut 5pcs (cut in small cube),
marinated with salt, pepper ,sesame oil & some corn flour
i marinated 3 hours then wrap with the skin ,
steam it 15mins
serve it hot!!
That's all!!

**100g Tang Mein four
**60g tapioca flour
**1/4tsp salt
**1Tbsp cooking oil
**220g hot boiling water
Method
1. Combine Tang Mein Flour ,Tapioca flour and salt in a big bowl.
2. Add hot boiling water into the bowl, stir with chopstick till combine, add in cooking oil, mix well till form a dough.
3. Cover the dough and leave aside let it cool.

~Banana Cupcakes with Chocolate Rice~


Long time didn't bake cake....friend give me banana just take 2 pcs do some banana cupcakes with some chocolate rice! Ehm....texture are soft and moist with banana ....if u like banana you will like banana cake...

my simple method as below
Ingredients:-
*60gm  - Butter
*30gm  - Sugar
*1          - Egg
*70gm  - Self Rising Flour (sifted)
*1/4 tsp  - Vanilla Extract
*1/2 tsp    - Baking Powder
** 2 medium size ripe banana mashed it and mixed with 1 tablespoon lemon juice

Method
- Pre-heat oven 180C
- Beat Butter and sugar in high speed till fluffy
- Add in egg follow by vanilla extract mix well
- Lower mixer speed add in Self Rising Flour and baking powder
- Lastly add in mashed banana and mix well the batter
- scope the batter into paper cups then top put 1 or 2 pcs cut banana and chocolate rice
- bake for 30mins

~Homemade Chilies Sauce~

My last post "Chai Kuih' , i  mentioned this homemade chilies sauce.
This Chilies sauce a must have 'item'  in my fridge, my favorite dipping sauce!

See the ingredients below?
Yes,,,,,, red chilies, garlic and small lime.

Easy lar...

** cut the chilies 'de-seed'
** cut the garlic
All put in blender add some water  BLEND it...
It's  thick,  add  in small lime juice and sugar.
Store it in a glass container and keep in fridge can last for 2-3weeks.
.
This is my favorite dipping sauce, for chai kuih, poh peah, crispy fried prawn, lor bak.....
usually i add some bottle chilies sauce and tomato sauce (i perfer Kimball ).
i will add more lime juice if don't have lime can add white vinegar.

Chai Kuih 菜粿

This is the 1st time i do "Chai Kuih" (steamed vegetable dumplings). Yes, i like chai kuih . In my mind i feel it is 'difficult' to do and a lot work, need to cut the turnip or jicama (Hokkien called it Bang kuang), stir fried it then the skin part need to wrap then steam it....BUT since  my favorite i need to try it out! Still search the recipe from wed , blog. The filling i cooked it very simple just bang kuang and carrot with some seasoning. The skin part even the TangMein flour packing can get the recipe. I like spicy food , so i eat chai kuih must with chilies sauce, i will share out my homemade chilies next post!

Filling
**1 yam bean (bang kuang) , sherdded
**1 small size carrot , sherdded
**2 slice garlic chopped
Method
1. Heat oil in a wok, put in garlic toast till fragrant
2. Add in yam bean (bang kuang) and carrot, stir fried it  for 15mins or till dry.
3. Add in seasonings  salt, and pepper, mix well. Leave aside to cool.

Skin
**100g Tang Mein four
**60g tapioca flour
**1/4tsp salt
**1Tbsp cooking oil
**220g hot boiling water
Method
1. Combine Tang Mein Flour ,Tapioca flour and salt in a big bowl.
2. Add hot boiling water into the bowl, stir with chopstick till combine, add in cooking oil, mix well till form a dough.

3. Cover the dough and leave aside let it cool.

To make the chai kuih
1. I weight each dough 20gm, flatten it , 
i use a 3" round cap cut out a round shape.
2. Put the filling on it then seal up the skin.
3. Brush some cooking oil on the steaming plate, steam for 10mins.

4. After steamed transfer the 'chai kuih' in plate and brush some oil on it to prevent all stick together.

~Happy Birthday Cupcakes~

This Happy B'day Cuppies nice rite? Made this cuppies for a friend just to wish her have a "Happy Birthday" BUT this is 2 months ago, i think she is waiting me blog this cuppies!! Just 'dig out' the photo edit and blog!!
Just a simple cake with whipped cream and deco with some Chocolate rice.Print some 'Happy Birthday' tag stick on a toothpick ..Done....

Simple butter cake recipe (10 small cupcakes)
Ingredients:-
**90gm butter
**65gm castor sugar
** 2 eggs 
** 1tsp Vanilla Extract
**45ml milk
**120gm cake flour / self rising flour (sifted)

Method:-
1. Beat butter with sugar till fluffy.
2. Add in egg one at a time till well combined.
3. Add in vanilla extract and milk.
4. Add in flour mix well.
5. Scope in paper cups.
6. Baked at pre-heat oven 180C for 25mins
7. Cool the cake on wire rack.
8. Deco with whipped cream or any topping you LIKE.

Red Velvet Cupcake

I totally forgot i bake this "Red Velvet" before when last week my cousin ask me why i didn't update my blog i just remember i not yet blog this "Red Velvet Cupcake".I know this Red velvet cupcake from my cousin, she keep on tell me "jie,,,u go find this red velvet recipe lar, this cake very nice". I just keep in mind , also don't know how the cake looks like until one day i 'surf' and found a blogger Nasi lemak Lover (i love her blog ) share it. I read the recipe...OMG red coloring .which i don't like.I just keep quite and go search for natural red color substitute. On the web they say use beet powder i ask around none, so i use another substitute "Red yeast Powder". Since i got the red yeast powder ,i can start to bake this cake. the color of the cake  not really 'Red' due to not using 'Coloring'...to me the important thing is the taste not the color...hahahaha...
Finally, i bake it and the taste i really like it....especially my little nephew! Cake soft BUT the cheeses topping i beat not hard enough!!

Recipe from "Nasi Lemak Lover" blogger
Red Velvet Cupcakes with cream cheese topping
Ingredients:-
**Cake flour 150g
**Baking powder 1/2 tsp
**Salt 1/4 tsp
**Cocoa powder 1 tbsp
**unsalted butter 80g  (at room temperature)
**Caster sugar 120g
**1 large egg
**Vanilla extract 1/2tsp
**1/2 cup buttermilk, at room temperature
 (Buttermilk substitute 1/2cup milk +1/2tbsp lemon juice, set aside for 5mins)
**1 tbsp liquid red food coloring (I use 2tbsp red yeast powder)
**1/2 tsp white distilled vinegar ( I use white rice vinegar)
**1/2 tsp baking soda
Method
1. Preheat oven to 180C. Place cup cake liners on a baking pan.
2. Sift flour, baking powder, salt and cocoa together in a bowl. In a jug, stir the red colouring      into the buttermilk. Set aside.
3. In the bowl of an electric mixer, beat the butter and sugar until light and fluffy. Beat in egg, followed by vanilla extract until the mixture is smooth.
4. With the mixer on low speed, alternately add the flour and buttermilk in 3 additions, starting and ending with flour. Mix until evenly combined.
5. Combine vinegar and baking soda in a small bowl until it fizzes. Quickly add to the batter and fold through briskly until evenly incorporated.
6. Pour into the prepared cupcake liners and bake in the oven on the middle rack for 25mins or until a skewer inserted comes out clean.
7. Remove from oven and let it cool a wire rack.
8. Apply cream cheese for topping and serve. (But i prefer after chilled it)

Cream Cheese Topping
**150g     cream cheese( at room temperature)
**40g       butter (at room temperature)
**70g       icing sugar (sifted)
**1Tbsp   lemon juices
**Finely grated lemon zest from 1 lemon
Method
1. Beat cream cheese and butter till light and creamy.
2. Add in icing sugar and mix well on low speed.
3. Add in lemon juices and lemon zest, combine well.
4. Store in fridge for later use.

Cake texture , taste and the cream cheese topping ......I LIKE It!!

~Tiramisu~ ( Simple Version)

After Mid -Autumn festival i rest ....stop baking !! my cousin ask me "jie, why u no update you blog?"I say...need a REST....hahahaha .excuses !!
Last week i borrow a Rasa magazine from Library.saw this Tiramisu quite simple no need Kahlua since i have a packet of "finger Biscuit; so try it out! I scan out the recipe but is in Malay ..i will write down my 'English Version' coz i do half of the recipe.


My Version below are:
**I use normal Philadelphia cream cheese since the chef say can use other cheese**
-150gm cream cheese
-100gm whipping cream
-10pcs finger biscuit
-4 TBSP icing sugar
-2 tsp Nescafe
-130ml Hot water
-some chocolate powder

*Pour the hot water in a small bowl add in 1Tbsp icing sugar and 2tsp nescafe stir it well
*Dip the finger biscuit into the nescafe let the biscuit absorb the nescafe put aside
*Put cream cheese and 2Tbsp icing sugar in mixer beat it in high speed till fluffy and add in
 whipping cream beat till soft and peak.
*Now can 'assemble' the cake...
  I use a square container (can assemble it into a glass as shown above) put the finger biscuit then follow by a layer of cheese mixture then finger biscuit again and cheese mixture ..my cake is 2 layer biscuit and 2 layer of cheese. the top layer must be cheese mixture and put some chocolate powder on top or some fruits for decoration. Chilled it before serving!

Today last batch 'Snow Skin mooncake" (Ping Pi Mooncake)
Actually, me enjoy bake the mooncake!!

昨晚,终于烘完最后一批上海月饼,今早也将月饼一一送完!!
下午做完冰皮月饼就收工了,有点累但我‘很享受过程“。。哈哈。。

Golden Syrup


Golden syrup is important for doing mooncake. It need to keep , the longer you keep your mooncake
color come out nice texture good. Want to say sorry....i lazy to type the step!!below links they share very clear how to cook 'Golden Syrup'





~Mooncake~

Mooncake / Mid Autumn festival coming soon.....A lot bloggers post their traditional mooncakes, Ping Bi mooncake, Shanghai mooncake, Jelly mooncake.... all look very nice!! Make me thinking 'i also want start do mooncake".....in my mind since i got the 'Golden syrup' why not try do some 'mini size' mooncake...
So i start cook red bean paste and my mini traditional  mooncake "not bad" for the 1st trial!!!
The paste just nice not sweet. For Ping Bi the skin i just bought from ingredient shop the premix flour!

So for those want do mooncake still have time....hurry up!!! bake it!!!

Recipe for mooncake skin
~90g  Golden syrup
~45g  Cooking Oil (i Use Knife Brand)
~1/2tsp Alkaline Water
~1/2tsp Baking Soda
~125g   Plain Flour
** Filling can buy ready made, for this mini moocake i use red bean paste (i cooked myself)

Method
1. In a mixing bowl, mix Golden syrup,Oil and Alkaline water,stir it and leave aside for 5 mins.
2. Add in Plain flour and Baking soda , mix well , cover it , let it reast for 75mins.
3. If the dough very sticky , add in some flour.
4  This mini mooncake i use 22g filling and 18g skin.
5. Wrap the filling with the skin put in mould slowly knock out, place on baking tray.
6  Bake in preheated oven @ 160C for 10mins take out brush egg glaze then bake another 15mins.

**Egg glaze - one egg yolk with 1/2 tsp water

 Ping Bi (Snow Skin Mooncake)
Recipe and how to do
* 250g Ping Bi Premix Flour
* 60g Shortening
*170g icing sugar
*150-180ml water
can add color or flavour
 **Just mix all the ingredients into a smooth dough
 ** Wrap in whatever filling you like
** Shape it whatever shape you like
Wait....cannot eat yet.....chill it 1st!!

Simple???? Try it out!!!

~~Cheese Tart~~



Ehm....If you love "Cheese"....You will Love it "Cheese Tart".
I still can remember when is my 1st time made cheese tart. In 2010 request from my cousin..
She ask" Jie, you know how to made cheese tart?" so....this jie jie try lor , bake the cheese tart bring it all the way from Penang to KL for her.....hahahahaha...
My eldest nephew also love it very much.....he can eat 4-6 in one time.....


What u need for Pastry (tart Shell)
    * 125g  Butter (room temperature)
    * 65g  Castor Sugar
    * 1  Egg yolk (cold)
    * 250g  Plain flour
    * 1 tbsp Cold Water
    * ½ tsp Vanilla Extract
for the Filling
    * 250g  Cream cheese
    * 20g  Butter
    * 60g  Sugar
    * 1  Egg

How to make Pastry (Tart shell)
   1. Cut butter in small cube.
   2. Pour the flour on the table top, use finger tips rub the butter with the flour till all flour coat with butter.
   3. Then add in sugar mix well with the flour and add in egg yolk fold into a dough.
   4. Add in cold water to knead into a smooth pastry dough.
   5. Wrap pastry with plastic and leave in fridge for ½ hour.
   5. Roll to circular shape and cut with pastry cutter line in tart mould.
   6. Using a fork, prick some holes on the base of  the pastry. Bake at 180°C for 15-20 minutes.

Filling
   1. Beat cream cheese, butter and sugar together till light, add in egg and beat till well mixed.
   2. Spoon mixture into baked tart shells.
   3. Mix 2 tbsp cocoa powder with a small amount of hot water.  Mix into a paste.
   4. Dip the tip of a chopstick into chocolate paste and draw some patterns on the top of the cheese.
   5. Bake at 180°C for 10 minutes.

上海月饼~Shanghai Mooncake~










Mid-autumn or Mooncake Festival is coming, now we can find mooncakes on sale everywhere and a lot bloggers also start doing and posting  making of their own mooncake.Today I'm sharing this 'Shanghai mooncake'  the making are much more easier than the traditional mooncake.

Here the recipe
Ingredients:-
(A)Pastry Skin
Plain Flour           320g
Milk Powder       2Tbsp
Custard Powder  25g
Corn Flour          20g
Baking Powder   1/4 tsp
Golden Syrup      70g
Icing Sugar         90g
Shortening          60g
Butter                 80g
1 Large Egg

(B) Filling
Lotus paste       1kg
Melon Seeds     150g (bake in oven for 8mins)
1 Large Egg
12 Salted Egg Yolk ( i bake in oven 120C for 12mins)
** mix the melon seed into the lotus paste and knead it .
** divide the paste for 60gm each and wrap the salted egg yolk inside each

Method:-
~~Beat  Butter, Shortening and sugar till soft and fluffy add in golden syrup and egg mix well sift in flour, milk powder, custard powder, corn flour and baking powder mix well till become a soft dough .
~~ Divide the soft dough into 40gm each .Flatten  the dough and wrap the lotus filling into it , shape it into a mini dome shape.
~~ Place it on a baking tray line with baking paper.
~~ Lightly brush the surface with beaten egg and add some melon seeds on top.
~~ Bake at preheated oven at 180C for 20mins
~~ Leave Shanghai mooncake to cool and store in container.

香脆炸鸡~Crispy Fried Chicken~


Raya holiday just over....How is your holiday??? Me, very busy for this holiday BUT "I'm Very Happy".....Yup, met with friends

 And also try up this yummy, Crispy Fried Chicken...this recipe was found in FB , i join this cooking group saw they are saying this Fried Chicken is "Superb" & the preparation look simple, so i try it out at my mom's house during raya ...my nephews say "very good, when u want cook again??'

It's simple, wash the chicken, marinate, put flour and deep fried it!!!  That's all....
Recipe and Method
**Chicken drumstick or chicken wing.
**Marinate with Oyster Sauce , Sesame Oil, Salt & Pepper for 2 hours.
**Prepare 2 big bowls....one with plain flour & one with water
**Heat up cooking oil in a wok or deep sauce pan.
*- Coat the chicken with flour.
  - Next dip the chicken in water
  - then coat the chicken with flour again
**Finally deep fry it till golden brown


Try it Out.. The Kids will love it!!

 
炸鸡食谱:
**鸡塊

腌料: 蠔油,麻油,盐,掩二个小时.
做法
将腌好的鸡肉,沾上面粉,然后下水沾湿它,再拿回去沾上面粉,把鸡肉沾满面粉,烧热油,炸至熟.
**油要盖过鸡肉,油要熱,下了鸡肉不要 翻,等定形了后才翻。

~家常菜~Deep Fried Prawn with batter & Fried Kacang Botol with Sambal

Yes, enough for cakes at the mean time better stop baking cake........'fattening'!!!!

I know a lot people like this  Deep Fried Prawn with batter (煎虾卷) just marinate the prawn ,dip in batter and deep fried it.....simple as 123,right?? to me don't say " I don't know cook".. everyone also don't know just the matter u want to cook or not? am i right?

Come try it out this **Deep Fried Prawn with batter (煎虾卷) 
300gm medium prawn (20pcs)
marinate with pepper , salt and sesame oil for 30mins
-2 Tablespoon Plain flour
-1 Tablespoon Corn flour
-1 tsp Baking powder
-1/4 tsp salt
-1 Tablespoon Oil
mix the above with 1 egg and some water become thick batter
***heat oil ,dip the prawn into the batter deep fried it till golden brown..

**来试试煎虾卷
300gm 中虾 加入盐,胡椒粉和麻油 30分钟
面糊: 
栗粉  1大匙 
普通面粉 2大匙 

发粉  1小匙 
盐  1/4小匙 
食油 1大匙

以上 材料 加入1粒鸡蛋和少许水搅拌面糊. 
***烧热油,虾沾上面糊,放入热油中炸至金黄色.


Fried Kacang botol with sambal
6-7 kacang botol 
1 big Onion
some prawn

Sambal 

2 red chilies 
4-5 small onion 
Pound or blend the chilies and small onions
2 tablespoon dry shrimp (soak it and pound it)

***heat up wok with 2 tablespoon cooking oil , fried the blend chilies and small onions till fragrant then and in dry shrimp..fried for 3-4 mins , add in onion and prawn fried follow by kacang botol fried till all cooked.

~Hokkaido Chiffon Cupcakes~


Hokkaido Chiffon Cupcakes....I love it very much because it really easy to bake and this cake not a heavy type very light (chiffon ma)......i can eat a lot !!!! The best after chilled in fridge!!
It really a very nice cake ,i bake it 3 times in a week!!! hahahaha!!!!
I forgot i took the recipe from which blogger ,it's very 'hit' ..a lot bloggers share it!!

So try it out, you won't regret!!
What u need and what to do?? Just as below

(A)
- 60gm   Sugar
- 1/4 tsp Tartar Powder 
- 3 Egg White
**Put egg white in mixer add in tartar powder beat till bubble come out then add in 1/3 sugar beat in high speed for 2-3 mins then pour in the balance of sugar beat till stiff.
 
(B)
- 3     Egg yolk
- 1/8tsp  Salt
- 60gm   Full Cream Milk
- 40gm   Corn Oil (i use Sunflower Seed Oil
- 90gm   Low Protein Flour / Soft Flour (sifted)
- 1/4 tsp  Vanilla Extract                    

- 1/4 tsp  Baking Powder                      
 **lightly beat egg yolk + salt
  - add in Corn oil / Sunflower seed oil 
  - add in milk mix well
  - add vanilla .follow by flour and Baking Powder mix well
**Fold in 1/3 beaten egg white into (B) mixture use spatula stir well then follow by the balance of beaten egg white stir the batter well. scope the batter into paper cups.
 (Bake it in Preheated oven @170C 25mins.)


I use non dairy whipping cream for the filling.Just whipped the cream.
Let the cake cool down use "piping bag and straight nozzle" ,pipe in the cream.
Chilled the cake before serving or eat!

~~Banana Cake~~

After Lepat Pisang now Banana cake.....Banana fever???? 
No lar...Actually i baked Banana cake first the balance of banana i do Lepat Pisang...Coz Pisang Raja is the best Banana to bake cake and for do 'kuih'...

Ya...recently busy + lazy...follow Olympic !!! actually on laptop want blog and watch together but FB on also...at the end keep on chatting with friends!! Hahahah....


Here u go the ingredients and Method for Banana Cake

120gm  - Butter
70gm    - Sugar
2          - Eggs
140gm  - Self Rising Flour (sifted)
1/2 tsp  - Vanilla Extract
1 tsp    - Baking Powder
** 160gm banana mashed it and mixed with 1 tablespoon lemon juice


Method
- Pre-heat oven 180C
- Beat Buttter and sugar in high speed till fluffy
- add in egg one at a time
- add in Vanilla extract
- Lower mixer speed add in Self Rising Flour and baking powder
- Lastly add in mashed banana and mix well the batter
- Put in cake tin bake for 40mins

** the banana cake will taste better after a day!!!

~Lepat Pisang~


Lepat Pisang is a Malay kuih.....why i do malay kuih???
this is all because i bought Pisang Raja in the market after bake the 'Banana Cake',
still left 3 banana....thinking what to do with the banana!!!!
Yeah ...Lepat Pisang!!

Here what u need to do:-----
~3 Banana (mashed it)
~1/2 cup rice flour (sifted)
~1 Tbsp sugar
~1/4 cup thick coconut milk
** Mixed all the above ingredients, batter not too thick (slightly sticky)

Banana Leaf
**  cut it into 20cm X 15cm each
**  put the banana leaf in to a boiling water (to soften the leaf for easy to wrap)
** wipe the banana leaf and put 2 Tablespoon of the batter wrap it nicely
** steam it 15-20mins
** cool down the Lepat Pisang and Serve it!












Roti Jala


Roti Jala normally we found at malay kuih stall...
Actually is not difficult to make it.
Roti jala can eat with
~~curry chicken (will share the recipe later)
~~potato filling (curry puff filling refer to my curry puff page)
~~tin sardine

What u need.....
- 1 3/4 cup of all purpose flour (sifted)
- 1 1/2 cup of low fat milk
- 3/4 cup of water
- 1 egg
- 1/2 tsp salt
- 3/4 tsp tumeric powder

**mix the above ingredients in a bowl whisk it and sifted the batter set aside for 15mins.
  ( the batter should be not so thick so can flow out from the "jala cup")
**grease up a flat pan (i use non-stick pan) , fill up 'jala cup" circle the pan let the batter
   drop into pan form a 'jala' shape, about 2 mins it will turn from white to yellow
   remove from pan, fold it to triangle shape or roll it.

Blueberry Cheese Cake

It's Blueberry  Cheese Cake!!!

Wow.....so long i didn't post anything on my blog!! ~~BUSY~~
run here & there for the past 2 weeks, Public holidays make me more busy!!!
i still cook & bake , taken all the photo but no time to blog!!

This is one of my favourite cheese cake ingredients and method as below

Ingredients:-
100gm  -  Cream Cheese
50gm    -  Butter
50ml     -  Full Cream Milk
3 eggs white
3 eggs yolk
40gm   -  Sugar
45gm   -  Super soft flour (sifted)
15gm   -  Corn flour( sifted)
1/2tsp  -  Cream of tar tar
100gm -  Blueberry filling

Method:-
**Melt cream cheese and butter using double boil method
    add in egg yolk and milk stir well set aside (mixture 1)
**Beat egg white , sugar and cream of tar tar till stiff.
**Mix 1/3 of beaten egg white into (1) use spatula slowly mix well.
** Add in sifted flour mix well and add another 1/3 of beaten egg white mix again.( mixture 2)
** Pour the (mixture 2) into balance of  beaten egg white mix well.
** Bake in pre-heated oven 150C 50mins (put a bowl of water in side oven)

Cool down the cake in wire rack, cut it into 2 slices spread  blueberry filling in between and 
on top the cake as well .Chilled the cheese cake 4 hour before serve!.

Fish N Chips






Fish And Chips
but this without Chips!!! hahahah....









This is a simple western dish, normally i prepare mushroom soup together.

Today i share how to prepare this Fish...for mushroom soup i will share it another day!




What we need?
**Lettuces, tomato, cucumber, Lemon
**Cabbage and carrot (cut in small slice add in mayonnaise make coleslaw)
**Fish Fillet (marinate with salt and pepper for 30mins)
** 1 Egg white and 1cup breadcrumbs
Dip the Fish fillet into egg white and coat with breadcrumbs
Fry in hot oil till golden brown...serve it hot!


My simple version of tartar sauce:-
onion, parsley, lemon juice(1 tbsp) mix well with mayonnaise

For those like chips or potato wedges just buy from supermarket and fry it!!!


This is another simple and easy dish.no matter adults or children will "Like it".
