~Yam Cake (Or Kuih)~


Yam Cake / Or Kuih  my favorite too!!! I like yam...
bought a small yam just nice for me to steam one small plate of Yam cake!

Ingredients 
(a)~200gm yam, cut small cube

(b)~100gm Rice Flour
    ~20gm Tapioca Flour
    ~180ml Water
    ~a pinch of salt
(Mixed and sieved the above ingredients)

(c) for toppings
~50gm dried shrimp. soaked and chopped
~5 shallots, slice in thin slices
~2 stalks spring onion, chopped 
~2 red chillies, chopped

**Seasoning (Salt 1/4tsp, pepper 1/2tsp and five-spice powder 1/2 tsp)

Method
~Heat up 5Tbsp some oil and saute shallots till crispy , remove from wok  set aside
~Use the remain oil add in dried shrimp saute till fragrant, remove from wok set aside
~Use the remain oil add in yam and stir fry, add some water , cooked till yam soft. Then add in (b) and seasoning..keep on stir till the batter cook and thick.
~Pour the thick batter into a round tray ( tray put some oil)
~Steam it for 45mins. Leave aside to cool.
~ Put the toppings...cooked dried shrimp, crispy shallot, spring onion and chillies.

~Shrimp Dumplings (Har Kow)~

'

Last few weeks went to my friend house we do 'Chai Kuih ' together.....
at the end she took out some marinated shrimp say " Let's us try do some har kow"   WOW....very good ...so the next day i also do some since all the ingredients i have!!

The 'Har Kow' skin i use 'chai kuih' skin recipe
so, just marinate the prawn is simple

medium prawn 300gm, water cheasnut 5pcs (cut in small cube),
marinated with salt, pepper ,sesame oil & some corn flour
i marinated 3 hours then wrap with the skin ,
steam it 15mins
serve it hot!!
That's all!!

**100g Tang Mein four
**60g tapioca flour
**1/4tsp salt
**1Tbsp cooking oil
**220g hot boiling water
Method
1. Combine Tang Mein Flour ,Tapioca flour and salt in a big bowl.
2. Add hot boiling water into the bowl, stir with chopstick till combine, add in cooking oil, mix well till form a dough.
3. Cover the dough and leave aside let it cool.

~Banana Cupcakes with Chocolate Rice~


Long time didn't bake cake....friend give me banana just take 2 pcs do some banana cupcakes with some chocolate rice! Ehm....texture are soft and moist with banana ....if u like banana you will like banana cake...

my simple method as below
Ingredients:-
*60gm  - Butter
*30gm  - Sugar
*1          - Egg
*70gm  - Self Rising Flour (sifted)
*1/4 tsp  - Vanilla Extract
*1/2 tsp    - Baking Powder
** 2 medium size ripe banana mashed it and mixed with 1 tablespoon lemon juice

Method
- Pre-heat oven 180C
- Beat Butter and sugar in high speed till fluffy
- Add in egg follow by vanilla extract mix well
- Lower mixer speed add in Self Rising Flour and baking powder
- Lastly add in mashed banana and mix well the batter
- scope the batter into paper cups then top put 1 or 2 pcs cut banana and chocolate rice
- bake for 30mins

~Homemade Chilies Sauce~

My last post "Chai Kuih' , i  mentioned this homemade chilies sauce.
This Chilies sauce a must have 'item'  in my fridge, my favorite dipping sauce!

See the ingredients below?
Yes,,,,,, red chilies, garlic and small lime.

Easy lar...

** cut the chilies 'de-seed'
** cut the garlic
All put in blender add some water  BLEND it...
It's  thick,  add  in small lime juice and sugar.
Store it in a glass container and keep in fridge can last for 2-3weeks.
.
This is my favorite dipping sauce, for chai kuih, poh peah, crispy fried prawn, lor bak.....
usually i add some bottle chilies sauce and tomato sauce (i perfer Kimball ).
i will add more lime juice if don't have lime can add white vinegar.
